Teriyaki, like sushi or tempura, is one of those terms that are shorthand for Japanese cuisine.
This technique consists in grilling or broiling ingredients that have been glazed with a sauce of flavor so characteristic that people use the term “teriyaki” interchangeably to refer both to the cooking style and the sauce.
Originally created with beef or fish in mind, the appeal of this sauce knows no culinary boundaries. From pasta to corndogs, there is almost no dish that hasn’t been enriched by the taste of teriyaki sauce at some point.
The original recipe
Authentic teriyaki is made with soy sauce and sake or mirin (sweet wine). Sometimes garlic and fresh ginger are also part of the mix. But the widespread adoption of this technique has led to deviations from the original recipe. Cooks all over the world add their unique, personal touch to teriyaki. So much so, that in some cities teriyaki has become almost a local food that is Japanese only in name
“Glossy Broil”
Teriyaki means “glossy broil” or “glossy grill” in Japanese. In fact, this sauce was created sometime in the 17th century with grilling in mind. Teriyaki gives meat or fish a glistening appearance, hence the “glossy” part of its name. In its westernized versions, teriyaki is used as a marinade as well as a basting sauce.
Arrival to the US
According to this Google graph the word “teriyaki” was already being used in books the 1940’s, and its frequency increased constantly, reaching its peak in 2000.
However, it was during the 1960s that Japanese restaurants popped up all over the country. That was the moment when the “glossy broil” became a favorite of lovers of Japanese cuisine. It was only a matter of time for it to reach international stardom, and nowadays meat and vegetables prepared this way are served in restaurants all over the world.
