Spicy, garlicky and tangy, this herb sauce also consumed in Uruguay is an essential part of Argentinian culture and one of the many enticing culinary options included in our menu.
Recipe
The traditional chimichurri recipe calls for garlic, olive oil, red pepper, oregano and parsley. Grillers mix all the ingredients in a glass jar, either shaking the glass or using a spoon, until they achieve the right consistency. As an Argentinian author explains with some reverence, “every good parrillero knows this recipe quite well.”
Origin of the Word “Chimichurri”
The origin of the word “Chimichurri” is unknown, but interesting theories abound. Some claim that the term is a reference to an English merchant named Jimmy Curry, whose name sounds a bit like “chimichurri” when pronounced with an Argentinian accent. Others think that chimichurri comes from the Basque “Tximitxurri”, which would mean “mix, mess, jumble.” This theory is compelling, although “Tximitxurri” does not appear in any Basque dictionary available online.
Significance
This sauce plays a special role not only in Argentinian cuisine, but also in everyday life. Asados, or barbecues, are social events, and an asado without “chimi” (the condiment’s affectionate nickname) is unthinkable. In addition, chimichurri is also a condiment for choripan, a sausage sandwich which is one of Argentina’s most popular street foods.
Chimichurri Goes Viral
Chimichurri was the unexpected protagonist of a viral moment in 2019. Chimichurri’s co-star was even more unlikely: Maucalay Culkin. The former child star mocked the Oscars tweeting a selfie with a chimichurri jar while the awards ceremony took place. The tweet was a sensation among Argentinians, who saw their favorite condiment get some of the international recognition it deserves.
