What Are Chiles Rellenos?
“Chiles rellenos” means literally, “stuffed chili peppers,” and although this dish is common all Mexican states, it has never gained the same international relevance as tacos or burritos.
Chiles rellenos are made with “chiles poblanos,” a variety of pepper well suited for stuffing. These peppers are big, easy to hollow, and not too spicy. The peppers are usually stuffed with picadillo (ground meat) or cheese, fried in batter and served with “caldillo”, a brothy tomato sauce.
There Are Many Regional Variations
As is often the case with dishes that are popular all over Mexico, there many different regional variations of chiles rellenos. For example, in the states near the coastline, the peppers can be stuffed with seafood. In Tlaxcala and Puebla, two states with a strong farmer culture, the stuffing is rich in vegetables like zucchini, corn, and carrots.
Chiles rellenos are a good example of Mexican home cooking, where the idea is making the most of every ingredient. For instance, although you have to hollow the peppers, no part of them goes to waste. Instead of throwing them away, the seeds and innards of the peppers are mixed with other ingredients and then fried in batter.
