Are Carrots Root Vegetables?
Yes, carrots belong in the root vegetable category, a list that also includes beets, radishes, parsnips, and turnips.
As the name suggests, root vegetables grow underground. However, they can be easily spotted because they are often topped by a thick mane of green foliage. So as you can see, carrots fit the root vegetable profile to a T.
Root vegetables can be highly nutritious and carrots are no exception. One cup (128 grams) of chopped carrots contains important nutrients such as vitamin A (21383 IU), vitamin C (7.6 mg), vitamin K (16.9 mcg), potassium (410 mg), thiamin (0.1 mg), and dietary fiber (3.6 g).
How Many Types of Vegetables Are There?
Of course, there are other types of vegetables in addition to root vegetables. Here’s the full list according to the edible parts of different vegetables, along with some examples for each type:
- Root vegetables: carrots, beets, yam
- Stem vegetables: asparagus, bamboo, kohlrabi
- Tubers: potatoes, Jerusalem artichokes, and taro
- Leaf vegetables: lettuce, chard, and celery
- Bulb vegetables: onion, garlic, fennel
- Head vegetables: broccoli, cauliflower, artichoke
Keep in mind that this division is based on the portion of the veggie that we eat. In other words, this is more a culinary reference than a scientific classification, considering that a vegetable can fall into more than one category, depending on which part of the vegetable we eat.
