An Aristocratic Family
Beef Stroganoff is a Russian dish known since at least the eighteenth century.
There’s no official history of Beef Stroganoff, but according to the most accredited version, the dish is named after Count Pavel Stroganoff, the scion of an aristocratic family historically close to the Russian Czars.
Stroganoff was a diplomat and a general in the Napoleonic wars. Like many other Russian aristocrats, Stroganoff loved all things France and made a point of hiring chefs from that country who created a fusion of Russian and French flavors.
According to the legend, beef Stroganoff would be the result of this fusion. It consists in thin strips of beef cooked in a sour-cream sauce with onions and mushrooms.
The Staying Power of a Compelling Story
Apparently, the dish was invented in the 18th century and became very popular in the United States between the 1950s and 1960s.
