Take the Necessary Precautions
Remember that, regardless of the cooking method, handling chicken calls for some special precautions. The Centers for Disease Control and Prevention CDC) recommend to do the following in order to avoid food poisoning (see full article here):
- Don’t wash raw chicken. Doing it may contaminate other foods and utensils.
- Keep raw chicken and its juices away from other food.
- Wash hands with warm, soapy water for 20 seconds after and before handling chicken.
- Use a separate cutting board for chicken.
- Wash any utensils, containers, or plates that come in contact with raw chicken.
- Use a food thermometer to ensure that chicken is cooked to a safe internal temperature of 165°F.
Marinate Your Chicken
There’s no better way to punch up your grilled chicken than with a tasty marinade.
To marinate your chicken, mix the ingredients of the marinade in a gallon-sized zip-top bag and then place the chicken inside. The ideal is to let the chicken soak for at least one hour, but if you’re in a hurry, even 10 minutes can dramatically improve the taste of your chicken.
Here’s a simple recipe for a chicken marinade:
- ½ Cup of olive oil
- ½ Cup of balsamic vinegar
- 1 Garlic clove (crushed)
- 2 Tablespoons of lemon juice
- Fresh herbs of your choice, finely chopped (rosemary, thyme,

Clean and Oil Your Grill
Before getting started, it’s important to clean your grill grate. To do this, fire up your grill to burn the residues from previous cookings and then use a grill brush to get rid of any stubborn gunk.
Let your grill cool and then oil it. Dip a paper towel in oil, and then use the tongs to wipe the grate wit it. This will avoid chicken from sticking to the grill when you cook. Happy grilling!
