What Are Zoodles?
Although they sound like the culinary version of mad libs (why else would anyone imagine a combination of zucchini and noodles?), zoodles are a gluten-free hit in kitchens and restaurants around the world.
Simply put, zoodles are zucchini cut into thin, curly strips that resemble spaghetti. They are as versatile as zucchini itself: you can cook them or serve them raw with your favorite salad dressing.
The simplest way to make zoodles is by using a tool called a spiralizer. You can also use a julienne peeler, although this may require more work. But what about freezing your zoodles? More on that in just a minute.
Can You Freeze Zoodles?
As touched on earlier, making your own zoodles can be time-consuming. So it makes sense to want to make them when you have time and then freeze them to cook them at a later date.
If that’s what you have in mind, go right ahead — You can, in fact, freeze your zoodles. Here’s how:
- Blanch your zoodles. Drop them in boiling water until their green color deepens (about three minutes).
- To remove excess moisture, put the zoodles on a paper towel and let them dry.
- Once dry, put the zoodles in a zip-top bag and store in the freezer.
It’s important to note, though, that while zoodles will keep in the freezer for up to a month, their texture and flavor can be affected if they stay frozen for long periods of time.
Blanching your zoodles contributes to slowing the enzymes that cause your zucchini to lose flavor and become mushy over time. If you need to freeze your zoodles for just a few days, you can skip the blanching.
